Gluten Free Dairy Free Chocolate Cookie Bites

It’s been a year now for me going gluten free & recently added dairy free to that.  I’m loving the results in both how I look and feel.  I’ve struggled most of my life with mild to later severe acne and after years of medications and products a friend mentioned over a bonfire that I should try eliminating gluten from my diet…I did…and it worked amazingly!!

Recently I’ve been trying different recipes in search of some delectable treats to have on hand when I want one.  This one is one of my new favorites so I thought I’d share it with you!

It came from a recipe I found on Pinterest via the Sweet Treats by Shayna Blog and you can find it here.  The original recipe had honey, pecans & a lot more cinnamon in it so it’s another option if you’d like to add those!

/ /  GLUTEN FREE DAIRY FREE CHOCOLATE COOKIE BITES  / /

Ingredients 

1 cup Coconut Flakes

1 cup Chocolate Chips (non dairy)

1/2 cup Almond Butter

1/3 cup Coconut sugar

1/3 cup Olive Oil

1 tsp Vanilla

few shakes of Cinnamon

Combine chocolate, olive oil, coconut sugar, vanilla & almond butter in a sauce pan over medium heat.

Set aside coconut flakes and cinnamon.

Stir your ingredients in sauce pan until chocolate is melted smooth.  Remove from heat and stir in the coconut flakes and cinnamon (add in as much cinnamon as you like ~ I just did a few shakes for a more subtle taste).

Now just drop spoonfuls of your mix onto a parchment paper lined tray or cookie sheet.

After making them that way a few times I decided to get a mold to make them into more of a shape ~ either way works great…it just depends on if you’d like the blob/drop cookie look or a solid shape.

  

It’s a Wilton baking mold that worked GREAT!  I got mine at Joann’s with a 40% off coupon and you can find it here.

After spreading out the spoonfulls onto your tray or in the mold let them cool in the fridge for a couple hours and you’re done!

I like using the mold because they just pop right out in these cute little squares!

Perfect little treat to have on hand!  I keep mine in a glass container in the fridge.

I love using glass to store my food and recently got a set with a variety of shapes & sizes with lids ~ they’re so cute and handy!
